Chicken Fajita Pasta

- 2 tsp olive oil
- 1 lb chicken cut into cubes
- 1.5 tsp cumin
- 1 tsp paprika
- .5 tsp chili powder
- .5 tsp garlic powder
- 1 large onion diced
- 1 large red pepper diced
- 1 large yellow pepper diced
- 3 cloves garlic minced
- 2 cup low sodium chicken broth
- 1 can Rotel
- 7 oz pasta
- 1 stalk scallions or green onions diced for topping
season chicken with 1 tsp cumin, /5 tsp paprika, /25 tsp chili powder, /25 tsp garlic powder (or use the taco season mix)
heat 1tsp oil, and chicken and cook, transfer to plate
add remaining oil, onions, peppers and seasoning, cook until soft
add minced garlic, cook slightly, remove from pan
add broth, Rotel and uncooked pasta. Cook about 15 minutes until pasta is tender.
add chicken and veggies back to pot and stir until heated.
Optional add avocado, sour cream, green onions/scallions
