Chicken Fajita Pasta

Ingredients
  

  • 2 tsp olive oil
  • 1 lb chicken cut into cubes
  • 1.5 tsp cumin
  • 1 tsp paprika
  • .5 tsp chili powder
  • .5 tsp garlic powder
  • 1 large onion diced
  • 1 large red pepper diced
  • 1 large yellow pepper diced
  • 3 cloves garlic minced
  • 2 cup low sodium chicken broth
  • 1 can Rotel
  • 7 oz pasta
  • 1 stalk scallions or green onions diced for topping

Instructions
 

  • season chicken with 1 tsp cumin, /5 tsp paprika, /25 tsp chili powder, /25 tsp garlic powder (or use the taco season mix)
  • heat 1tsp oil, and chicken and cook, transfer to plate
  • add remaining oil, onions, peppers and seasoning, cook until soft
  • add minced garlic, cook slightly, remove from pan
  • add broth, Rotel and uncooked pasta. Cook about 15 minutes until pasta is tender.
  • add chicken and veggies back to pot and stir until heated.
  • Optional add avocado, sour cream, green onions/scallions
