One-pot Chicken Chow Mein

Marinade
- 1/3 Cup low sodium soy sauce
- 1 tablespoon ginger minced
- 1 tablespoon garlic minced
- 1 tablespoon oyster sauce
- 1/4 teaspoon crushed red pepper flakes
- 1 tablespoon sugar
Other Ingredients
- 2 breasts chicken cubed
- 1/2 medium onion julienned
- 3 stalks celery sliced
- 4 carrots julienned
- 3 cups cabage shredded
- 2 packages Ramen Noodles (toss the seasoning packs out)
- 1.5 cups low sodium chicken broth
Garnish
- scallions or green onions
in a bowl mix: soy sauce, ginger, garlic, oyster sauce, sesame oil, sugar, red pepper flakes
Put cubed chicken into a plastic bag and pour half the marinade mix into the bag and save the rest for later. Marinate the chicken for at least an hour
After marinating, cook chicken in a large pot over medium high heat. Once cooked, remove from pot
Add sesame oil to the bottom of the pot and add: onion, celery, carrots and cabbage. Saute until onions are translucent
place the ramen noodle bricks in the bottom of the pot, pour chicken broth over the noodles. Cover the noodles with the vegetables as much as possible. Cover the pot with a lid and simmer for 5-7 minutes or until the noodles are cooked.
break up the noodles and place the chicken back in and pour in the rest of the marinade.
Garnish with scallions/green onions, and serve!
